Sumac!

Do you see the little light green cone of tiny berries on this tree? This is a sumac tree, (no, not poison sumac!). This one is a few years old. (They don't make cones in their first few years of growth). The tree makes these little seed cones near the top of the tree in the spring. They will mature over the season and in the fall they will turn a deep Burgundy red color and then we will harvest them. Then we will dry them and rub the little berries off the cones (and a few other steps) and then we will have a delicious dry spice for cooking all year. It's got a lovely lemony flavor and I have bought it for years before I realized it grows abundantly in the sumac grove by the farm. #EyesWideOpen!
